    Mash
    Feb 27 - 12:00
  1. Strike Water

    1. Fill kettle with 7.5 gallons Spring Water
    2. Add water salts
      1. 2.5 g - Epsom Salt
      2. 3.0 g - Calcium Chloride
    3. Check pH - should be around 6.8
    4. Heat to 160 degrees, remove heat
  2. Mash In

    1. Grain Bill (double crushed)
      1. 5.25 lbs Rahr 2-Row Malt
      2. 4.25 lbs Rahr White Wheat
      3. 1 lb Flaked Oats
    2. Stir in grist and remove doughballs
  3. Mash

    1. Insulate and hold for 60 minutes @ 152 +/- 2 degrees (Saccharification rest)
    2. Check pH - adjust to 5.2-5.5
  4. Mash Out

    1. Raise temp to 170 for 10 minutes
  5. Remove grain bag and drain

  6. Boil

  7. Bring wort to rolling boil

  8. Start timer for 60 minutes

    1. Add 60 min hops - 1 oz Hallertau
    2. Add chiller @ 15 minutes
    3. All Whirlflock @ 15 minute
    4. Add 0.5 oz Coriander, 0.5 oz Orange Peel @ 5 minutes
    5. Start chill at 0 minutes
  9. Chill to 90-95 degrees asap

  10. Ferment

  11. Transfer to Reactor fermentor

    1. Stabilize temp around 90 degrees
  12. Take sample for OG - target 1.053

  13. Oxygenate for 1 minute

  14. Pitch Yeast

    1. Voss Kveik Ale Dry Yeast
  15. Hold temp 70+ for 1+ week(s)

  16. Cold crash almost to freeze

  18. Transfer to bottling bucket

  19. Check final gravity FG

  20. Trasfer to bottles with Fizz Drops

  21. Transfer to (2) 1.5g Mini Kegs

    1. Pressure 5-10PSI for 2+ weeks

Bottles conditioned with Fizz Drops. Too flat to drink.
Kegged (2) 2.5 gallon kegs. First - too carbonated, then - too flat. Eventually got carbonation correct and remaining beer was very good.
