Strike Water

Fill kettle with 7.5 gallons Spring Water
Add water salts
2.5 g - Epsom Salt
3.0 g - Calcium Chloride
Check pH - should be around 6.8
Heat to 160 degrees, remove heat
Mash In

Grain Bill (double crushed)
5.25 lbs Rahr 2-Row Malt
4.25 lbs Rahr White Wheat
1 lb Flaked Oats
Stir in grist and remove doughballs
Mash

Insulate and hold for 60 minutes @ 152 +/- 2 degrees (Saccharification rest)
Check pH - adjust to 5.2-5.5
Mash Out

Raise temp to 170 for 10 minutes
Remove grain bag and drain

Boil

Bring wort to rolling boil

Start timer for 60 minutes

Add 60 min hops - 1 oz Hallertau
Add chiller @ 15 minutes
All Whirlflock @ 15 minute
Add 0.5 oz Coriander, 0.5 oz Orange Peel @ 5 minutes
Start chill at 0 minutes
Chill to 90-95 degrees asap

Transfer to Reactor fermentor

Stabilize temp around 90 degrees
Take sample for OG - target 1.053

Bottles conditioned with Fizz Drops. Too flat to drink.
Kegged (2) 2.5 gallon kegs. First - too carbonated, then - too flat. Eventually got carbonation correct and remaining beer was very good.
